PRI-02 – Product Margin Report

The PRI-02 report shows food items under categories (e.g. Pizza) and the following data:

• Menu Price – the item menu price.
• Menu Net – the item net value.
• Cost – the cost value of each food item.
• COS % (Cost of Sale) - how much are the costs out of the net selling price, shown as a percentage.
• GM % - Gross margin shown in %, which is calculated as 100 % - COS %.
